banana muffins

Mmmm. Banana Pecan Muffins.

I could have used walnuts, but I had pecans. So I used pecans.

8 tbsp (1 stick) butter, softened
1 cup sugar
1/4 cup brown sugar
3 bananas
2 eggs
1/2 tsp vanilla extract
1 cup all-purpose flour
1/2 cup whole wheat flour
1 1/2 tsp baking pwoder
1/2 tsp salt
1/4 tsp cinnamon
1 cup chopped pecans

Preheat oven to 350. Line muffin tin with muffin cups.

In the bowl of your mixer, beat sugars and butter until light and fluffy. Add bananas, blending until combined. Add eggs, one at a time, and then vanilla. Mix well.

In a seperate bowl, whisk together flours, banking powder, salt, and cinnamon. Then add to banana mixture and combine. Gently mix in the nuts.

Spoon batter into cups and bake for 25-30 minutes, until golden brown and toothpick inserted in the middle comes out clean.

Makes 18 muffins.
