Goetta is a sausage-like concoction that is native to Cincinnati. We had it on one of our trips to see Miranda and really loved it. It was ugly coming together, but so good when fried the next day.
8 cups cold water
1 lb ground beef
1 lb ground pork
2 cups pinhead oats
1 medium onion, minced
1/2 tsp pepper
1/2 tsp salt
1/2 tsp sage
Combine ground meats and water in a large pot. Bring to a boil while breaking up meat with a wooden spoon.
Add oats, onion, and spices. Cook on low for 1 hour, stirring frequently. Mixture will become very thick. Pour into greased loaf pans and refrigerate until solid. (I used 3 8×4 disposabable foil pans.
Remove loaf from pan and slice. Fry in a pan like you would sausage.
This makes a ton and I froze a lot of it after I sliced it.
24 total servings. 8 servings per loaf.
