So I may have had to resort to store-bought Greek yogurt since mine failed twice (grrrr), but I’m really looking forward to having this on my veggie sandwiches this week!
1 1/4 cup plain greek yogurt
1 cucumber
2 tbsp lemon juice
1/2 tsp dill
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp sugar
2 cloves of garlic, crushed
Peel and remove seeds from cucumber. Grate over a bowl double-lined with papertowels. Drain and discard liquid.
Combine grated cucumber and all other ingredients. Stir well. Allow to sit overnight and adjust salt and sugar as necessary.
1 serving = 2 tablespoons.
